Broad been and artichoke salad
Step one.
Bring a pot of water to the boil,add a teaspoon of salt and drop the peeld broad in to the water and turn down the heat,cook for two min,take out and refresh(to place in cold water to stop the cooking process)Strain and leave to one side
Step two
Place the preped artichokes in simmering water and lemon juice,take out when cooked and refresh,strain and keep to one side.

Step three.
Wash the potatoes put in cold water add salt and bring to the boil,take out when cooked and leave to one side. When cool dice into 21/2cm cubes
.
Step four.
To make the sauce, in a small bowl put 1 tbsp of mustard,90gr blue cheese ,and 1 egg yolk.Blend for1min and add1cup of unsweetend cream.Taste season taste.
Step five.
Bring all the ingreadients to gether toss in a large salad bowl,garnish with chopped spring onions and parsley
